I’m fascinated by the name which attracts a lot of speculation regarding its origin. To me, the most credible version is a brand of molasses named after a Shoofly, popular boxing mule. Apparently, many products adopted the name around this time.
Anyway, it’s interesting to note another use of molasses to alkalize food that is usually acid-forming.
